French style macarons (not macaroons which are something completely different) consist of 2 extremely light almond based biscuits with a slight crust to the outer shell & a soft, just chewy center which encase a rich & luxurious ganache or buttercream.

Available in a huge array of flavours, they can be customised to suit any colour scheme, on this occasion I made a mixed batch of 7 different flavours which were:

Lemon macarons with lemon curd meringue buttercream.

Orange blossom macarons with dark chocolate ganache filling.

Vanilla bean macarons with raspberry white chocolate ganache filling.

Chocolate macarons with chocolate hazelnut buttercream filling.

Pistachio macarons with white chocolate & pistachio buttercream.

So I had to 'Chanel' the inner diva for these sex it the city cupcakes, lol. Not that hard really. It's not that often actually that I get to do something that is a mixture of a little more grown up but also fun & these were just that.

They were gift box for a special ladies lunch where they were celebrating a 30th birthday.

The cake for the cupcakes was 'Blondie' vanilla butter cake paired with a smooth vanilla buttercream.

They was a mixture or buttercream & fondant finishes, which I just love the look of. I embossed the fondant ones for a little extra effect.

Of course hot pink & black was the perfect colour combination.

I think the high heeled shoes & the cityscape were my favourites.

For this engagement cake I gave the bride to be some ideas for the cake & she picked a few which I fussed together to create this. It could probably also be used as a wedding cake for a small gathering.

The cake was 3 layers of 'Killer Chocolate' (chocolate sponge cake) with chocolate buttercream filling & a chocolate ganache coating, then covered in marshmallow fondant.

It was a 10" square cake which is approx 50 regular serves.

I received these comments from the bride to be on my facebook page:

"Thank you so much for my cake everyone raved about it and it wad absolutely delicious - definitely getting you to make our wedding cake!!! Thanks again :)"

Mickey's Playhouse Cake (or Minnie's actually)

I love, love, loved doing this cake it was so much fun! The theme was obviously Disney's playhouse but with more of a focus on Minnie than Mickey.

It was a 10" square cake on the bottom (approx 50 regular serves) & the red playhouse body was approx 8 serves.

The cake was layers of 'Blondie' (vanilla butter cake) filled with a rich chocolate buttercream & all coated in a chocolate ganache before being covered with marshmallow fondant.

I absolutely loved making the sugar characters!

Ballet Cupcakes

These beautiful cupcakes were for a little girl's 8th birthday. She is a keen dancer & was even lucky enough to dance with the Russian Imperial Ballet when they came to Mackay, well done you!

There was 24 'Killer Chocolate' (chocolate butter cake) cupcakes with a mixture of buttercream & fondant finishes.

The toppers were all handmade by me & included flowers, ballet shoes (my favourite), tiaras & tutus in various shades of pink.

Cherry Blossoms & Butterflies

This cupcake tower was for a 21st birthday. The brief was flowers & butterflies without too much pink so these were my creations.

There were 24 cupcakes which were a mixture of 'Killer Chocolate' (chocolate butter cake) & 'Blondie' (vanilla butter cake) both with vanilla buttercream.

All the sugar decorations were handmade by me.

The top cake was 3 layers of 'Midnight Delight' (dark chocolate mud cake) with chocolate ganache filling & was a 6" round cake (approx 10 regular serves).

Sesame Street Birthday Cake & Cupcakes

These were another case of so called children's characters being used for a grown up birthday. They were for a young lady who was a Sesame Street fan's 18th birthday.

There were 2 dozen cupcakes featuring the Sesame Street characters of Elmo, Grover, Zoe, Big Bird, Oscar & Cookie Monster all handmade using marshmallow fondant.

The cake for the cupcakes was 'Killer Chocolate' (milk chocolate sponge) & the rich buttercream frosting was chocolate hazelnut.

There was also an accompanying Sesame Street themed cake, which was a 10" round cake (approx 35 regular serves).

The birthday girls favourite character is Zoe so naturally that was who I had to make for the top of the cake.

Lemon Meringue Cupcakes

More of my 'Deluxe Gourmet' cupcakes, Lemon meringue flavour this time.

The cake base is my 'Citrus Zing' cake (lemon flavour of course).

I then filled each cupcake with a generous pocket of fresh lemon curd.

Next was the super light & fluffy marshmallow like meringue frosting which I browned with my culinary blow torch (it's good fun doing that part).

& finally a good sprinkle of fresh lemon zest & yellow sugar.

These would have to be one of my favourites as they are not as heavy as all the chocolate laden ones, although I like all those too sometimes ;-)

Raspberry Ripple Cupcakes

Here we have birthday gift box of my raspberry ripple 'Deluxe Gourmet' cupcakes. Traditionally raspberry ripple is vanilla & raspberry but I use white chocolate instead, yummy!

They started with white chocolate mud cake with fresh raspberries mixed through.

Next came the white chocolate & fresh homemade raspberry coulis Italian meringue buttercream.

A good scattering of nice big chunks of white chocolate were added.

Each cupcake was then crowned with a single fresh raspberry before being given a good drizzle of some more of my homemade raspberry coulis.

I love raspberries!

Argyle Pattern Birthday Cake

I was given very little direction for this cake other than it should be a standard square cake & it should be black & orange. I do like to have creative reign over my cakes but sometimes it can be hard to come up with a design if there is no theme, especially if it is for a male as the cake also has to look masculine.

So after a long time throwing around ideas I decided on an argyle pattern which the customer said would be perfect. I also think with a change of colours this would be a great starting point for a golf cake.

The 12" square cake (approx 72 regular serves) was my 'Midnight Delight' (dark chocolate mud) cake with added Baileys for that little grown up touch. In-between the layers was a rich Baileys chocolate ganache which also coated the outside of the cake before it was covered in a chocolate marshmallow fondant.

Black can be a terrible colour to make fondant as you can have to add so much black to it to get a deep enough colour that it changes the consistency of the fondant so the way to get around this is to start out with chocolate marshmallow fondant so that is is fairly dark to begin with.

To achieve the famous argyle pattern I overlaid the black fondant with 2 different shades of orange diamond shapes & then added the stitching lines.

To help make the the pattern appear seamless from the top to the sides of the cake I added some fondant 'piping' around the top & bottom edges of the cake.

Paul Frank Birthday Cake

It was a lot of fun to make this cake, partly I think because of the story that goes with it.

It is of course the Paul Frank monkey logo & apparently the birthday girl just loves Paul Frank & always has. The cake was commissioned by her sister & although the birthday girl knew she was getting a cake from me she didn't know what it was.

I was told that she was hoping for a Paul Frank related cake & her sister said that she needed to throw her off the trail a bit. So with my help by making comments about the upcoming cake I was making on my facebook page (I was told she was stalking it for clues, lol) we managed to convince her that she would be receiving a cake covered in flowers & butterflies, which was apparently defiantly not her style at all.

Sorry for teasing you Lydia but at least you got a surprise & the cake you actually wanted in the end!

The flavour was a 'Killer Chocolate' cake (milk chocolate sponge) with rich chocolate ganache for the filling in-between the 3 layers, followed by a coating in chocolate ganache & finally covered in a layer super yummy homemade chocolate marshmallow fondant. All other featuring & decorations on the cake were fondant too.

It started out life as a 12" square cake which I carved into the correct shape so as with all carved/sculpted cakes the serves are a guess rather than an exact science but I believe it would of been around 40-45 serves.

As the designed was fairly plain I added a funky pattern to the cake board for some extra interest & I also gave it just a tiny little feminine touch by adding a bow to the monkeys head.

I received a really lovely thank you email for the order which you can see on my testimonials page

Cookies & Cream Cupcakes

Talk about cookies & cream overload, these little beauties were so packed full I don't think I could get more cookies into them if I tried!

I started out with a whole full size Oreo cookie in the base of each cupcake, yes that's right a whole cookie (start as you mean to go on as they say). On top of this was my 'Killer Chocolate' (chocolate fudge) sponge cake.

Next was as always a very generous & decadent swirl of buttercream, which was vanilla Italian meringue with lots of crushed Oreo cookies throughout.

I then studded the top of each cupcakes with lots of mini Oreo cookies before adding a drizzle of cookies & cream sauce on top.

Finally was a last little extra sprinkle of crushed Oreo crumbs.

Star Wars Birthday Cake

I sometimes get requests for cakes or cupcakes with themes such as Star Wars, Sesame Street, Toy Story etc that are actually for adult birthdays not kids & the customer always says something like "you must think this is a bit strange but could you possible do a 'such & such' theme but for an adult" the funny thing is it is not strange or surprising at all I get those requests all the time.

So this 6" square cake (approx 18 regular serves) was for a 40th birthday. The cake was 3 layers of 'Berrylicious Bling' (white chocolate & berry mud) with berry buttercream in-between the layer & an outside coating of white chocolate ganache before being covered in the marshmallow fondant.

As always the whole cake was edible with all decorations being made out of fondant with edible lustre dusts & pens used for highlights & details.

I included some the Star Wars logo & some fighting lightsabers.

The death star & R2D2.

I was told that R2D2 was the birthday boy's favourite character so naturally he had to be included but he was a lot trickier than I had imagined he was going to be, but I was happy with how he turned out in the end.

Sweet 16 Frangipani Cake

The requirements for this sweet 16 cake were for it to be hot pink, bright purple & lime green to match the birthday girl's party theme with quite a simple decorating style & some of my very popular handmade frangipanis.

It was an 8" round cake (approx 25 regular serves) in 'Rainbow Tie Dye' (multi colour vanilla butter sponge) filled with rich chocolate ganache.

All decorations were made using marshmallow fondant & the frangipanis were finished were edible petal dusts. As it was a fairly simple design I added a really pretty lace look border to add a little interest & femininity.

This order also included extra matching frangipanis toppers to be put onto some cupcakes that they were making themselves.

Tinkerbell Cake

Every little girl loves Tinkerbell (& some big girls too I think) & I certainly enjoyed making this pretty & girly cake.

It was an 8" round cake (approx 25 regular serve) & the flavour was my 'Rainbow Tie Dye' (multi coloured vanilla sponge) which was filled with a fresh strawberry buttercream & covered in marshmallow fondant.

The inspiration & theme I used was a sort of fairies at the bottom the garden thing. So I included flowers, blades of grass, toadstools & some little insects.

Mum asked the birthday girl & she decided to have a flat 2D picture of Tinkerbell on the top of the cake rather than a 3D figurine which I hand cut out of fondant & used edible pens to highlight.

All the decorations were also hand made from fondant. Here are the flowers & grass 'growing' up the sides of the cake.

Can you see the little butterfly that has landed on the toadstool?

Boys Christening Cake Decorations

I was asked to make these little boys Christening cake decorations for a returning customer who had previous had some golf cake decorations & some sugar lilies made for cakes that she had made herself.

The brief this time was for me to incorporate a teddy bear, a cross & some baby blocks spelling out the little boys name, all with a baby blue, white & silver theme.

I decided to have the teddy bear clutching the cross & also gave him a cute little baby blanket.

Everything was made using marshmallow fondant modeling paste & finished off with edible lustre dusts for an extra shimmer.

Also included were some baby block faces to go around the cake as the border. For these I used hearts, stars, crosses & the first initial of the little boy.

I thought it would be a nice idea as well to make some of those border block faces spell out the date of the Christening & so I highlighted them in silver to match the other blocks with the name on & make them stand out from the other a little.

Triple Chocolate Fudge Cupcakes

Wow this next set of 'Deluxe Gourmet' cupcakes sure did have a massive chocolate fudge hit!

They were a birthday gift box of a dozen deluxe cafe style triple chocolate fudge cupcakes.

The first thing I did was whip up a batch of my own delicious homemade chocolate fudge, then next I made some of my awesome sticky hot chocolate fudge sauce. Once I had prepared these I moved on to the actual cupcakes.

The cake flavour I used was my 'Killer Chocolate' (chocolate fudge sponge), then I filled each cupcake with some of that sticky chocolate fudge sauce. Next came a generous swirl of my smooth, rich chocolate buttercream.

I then topped each individual cupcake with nice big chunks of my chocolate fudge & for an extra indulgent chocolate hit I couldn't resist adding a Cadbury chocolate Flake as well.

& of course I just had to finish them all off with another good dose of that beautiful chocolate fudge sauce.

Message Wedding Cake

This was a classic 3 tiered round wedding cake for a wedding reception held at the Mackay Souths Leagues Club.

The bride wanted only very minimal actual decorating on the cake opting just to have some writing piped onto the cake along with ribbon borders & a topper. The topper was originally to be a fresh flower arrangement but at the last minute the bride found this ornament that she wished to have incorporated for the topper.

The bottom 10" tier was 'Midnight Delight' (dark chocolate mud cake) with a chocolate ganache filling, the middle 8" tier was 'Creamy Caramel' (caramel mud cake) with caramel ganache filling & the top 6" tier was 'Snow White' (white chocolate mud cake) with Baileys ganache. The whole cake was approx 70 regular serves.

The royal icing writing they choose to have was the happy couples names on the top tier followed be the words 'Together Forever' on the bottom tier.

The cake on the cake table once the lights were dimmed.

The Cake Cake

This cake is a little strange & rather whimsical.

As you can see it is a cake that I have actually decorated to look like cake, I know why bother you may ask but I think it is a really fun cake & I love this kind of look.

The 6" round cake (approx 10 regular serves) was layers of 'Berrylicious Bling' (white chocolate & berry mud cake) with a strawberry buttercream filling.

Firstly I covered the cake with pink marshmallow fondant before adding the the dripping chocolate ganache (which is actually modelling chocolate with a little fondant added).

I created the cream swirls, strawberries & sprinkle all out of fondant as well.

& finally for the finishing touch I made a funky little candle out of fondant, my favourite bit I think, I love the flame!

Bright Butterfly & Flower 1st Birthday Cupcakes

I have to say that the butterfly & flower theme would have to be one of my most popular ones, especially for little girls birthdays. I do however like to make each creation a little different so that no two orders are the same & everyone gets something a little bit individual.

So here is one of my latest butterfly & flower creations for a beautiful little girls 1st birthday.

I just loved the vibrant combination of colours I used for these cupcakes, I think they worked really well together.

The cake was 'Killer Chocolate' (chocolate fudge butter sponge) topped with a chocolate ganache buttercream frosting swirl.

I sprinkled the cupcakes with pink sugar pearls as well as a little dusting of edible silver glitter.

I made all the toppers from marshmallow fondant which included 3 different sizes of butterflies all with different embossed patterns, several different types of flowers, some leaves & some number 1's.

Creamy Caramel Cupcakes

Some more 'Deluxe Gourmet' cupcakes here, they were a gift box of a dozen filled caramel cupcakes for delivery from a mother to her daughter's place of work on her birthday, what a lovely surprise & a thoughtful mum.

Hmm where do I start, well the cake was 'Killer Chocolate' (chocolate fudge butter sponge) & the frosting was a caramel Italian meringue buttercream.

I filled each individual cupcake with a gooey homemade caramel. Then after adding the generous buttercream swirl I drizzled some more caramel on top of each one.

Next I sprinkled them all with chunks of some caramelised white chocolate that I made.

Then yet another drizzle, this time with melted dark chocolate.

& the final crowning glory was of course an individual caramel this time.

I receive lovely feedback from both mother & daughter "She said they were wonderful!!! The staff all really like them – I guess you will be getting some more business from this! Thanks for all your help." Cathy

1st Holy Communion Cupcakes

I received a call from a lovely lady inquiring about cupcakes for a 1st holy communion.

She wanted to give each child an individual boxed cupcake to help them celebrate & wondered if it would even be possible to do a topper with a related design but of course it was, so this was what I created.

The cake was 'Snow White' (white chocolate mud cake) & the frosting was vanilla buttercream.

The colour scheme was white & gold so I used gold foil cupcake cases this time paired with pure white buttercream.

I then added edible gold glitter & gold cashous (sugar pearls) to each cupcake.

For the toppers I made round discs with a gold rim, I added a gold chalice in the center with the host coming out of it, then on either side of the chalice I added some grapes & a loaf of bread. They were all made using fondant & edible dusts & pens.

You can really see the gold effect in this shot.

Here they are all boxed up & ready to hand out to the children.

I just love the way they set up the boxes in a cross formation, what a great effect.

& here is one of the happy young gentleman receiving his yummy cupcake treat. to take home.

I later received a lovely thank you email saying "The cupcakes for the children making their 1st Holy Communion were amazing! You are so creative and talented. What a wonderful design on top of the white mud cake. Everyone was blown away with them. Great job! Thanks" Donna

Thomas The Tank Engine Cake

This Thomas the Tank Engine cake was one I made for one of my son's for his 4th birthday.

I'm afraid it was a bit of a rush job so it is far from prefect but I though you might like to see it anyway, (such is the life of the poor cake decorators child, always getting last minute cakes, lol).

He is of course a big Thomas the Tank fan so he was thrilled with the cake anyway but if I have had more time I would of added railway tracks to the cake board, some little pieces of coal in the back of Thomas, as well as a Fat Controller figurine to stand next to him.

Normally the number on the side of Thomas is a number 1 but naturally I changed it to a number 4 as it was his 4th birthday.

The cake itself was a 'Midnight Delight' (dark chocolate mud cake) with layers of chocolate ganache. It is always hard to say how many serve a sculpted cake is but I would estimate that this one would be approx 45-55 regular serves.

The covering & all decorations on the cake are marshmallow fondant.

Lightening McQueen Baby Shower Cupcakes

These cute & fun cupcakes were for a baby shower. The mother to be knew that she would be having a beautiful baby boy & had decorated his nursery with a Cars & Lightening McQueen theme so a lovely friend decided that that would be a great theme for the baby shower cupcakes she was getting for her.

There were 3 dozen cupcakes altogether, 1 dozen with Lightening McQueen toppers, 1 dozen with "I's a Boy" toppers & 1 dozen with "Pitter Patter of Little Feet" toppers.

The cake flavour was 'Blondie' (vanilla butter cake) which was topped with vanilla Italian meringue buttercream frosting, tinted blue. Followed by some red sugar sprinkles & then of course the 3 different toppers which I hand made using fondant, royal icing, edible dusts & edible pens.

Lightening was quite tricky & took forever to do but I was pretty happy with how he turned out.

Apparently they went down very well. "They were a big hit, I think most of the girsl from the shower got your number :) Thanks again!" Jessica
